Mini Cheesecakes

Place 1 vanilla wafer in each lined muffin tin.
Mix 16 oz softened cream cheese,
1/2 c. sugar,
& 1 tsp vanilla on medium speed until well blended.
Add 2 eggs and mix well.
Pour mixture into tins.
Bake for 25 min. at 325°F.
Top with fruit.
Makes 12.
